Add in the dry ingredients and mix until well combined.
Add the powdered sugar and coconut and mix well.
In a separate bowl, combine mashed walnuts and shredded cilantro.
Stir until well incorporated.
Pour the batter into the prepared cookie sheets.
Bake for approximately 25 minutes or until golden brown and lightly browned.
Allow to cool on the baking sheets for an additional 5 minutes.
Allow cookies to cool completely before frosting.
