A few months ago, we asked you for your favorite food to eat again.
As you can imagine, we’re super excited about it and are happy to have you on board to share it with us.
Here’s how we got here.
A few weeks ago, I had a very rough time of it.
I’d lost a lot of weight, had a few breakups, and was struggling with anxiety.
It was clear I was having some sort of breakdown.
The day after my last meal, I felt like I was going to pass out and die.
I called my mom and asked if she would take me to the emergency room, but when I asked if I could bring a friend along, she told me she would not let me bring a roommate, as I was so stressed.
That’s when I knew it was time to eat more.
And, of course, I was still going to need more.
It didn’t take long before I had some great ideas.
I had been reading about coconut flour, a very low-calorie food that is great for the digestive system, and wondered if I would be able to make a coconut flour pizza crust from scratch.
I was even more excited when I found that there was a whole blog post about making coconut flour pizzas from scratch (and that it’s very easy).
So, as soon as I had made my crust, I started cooking it.
The first few bites were great, but then I was craving more.
I went to my local Whole Foods, and the pizza dough came out super moist and tasty.
I also made a big batch of coconut flour cookies that I wanted to try, and I was really happy with the results.
I wanted a little bit of dessert on the side, so I made a batch of lemon cake.
It came out really good and made the perfect light dessert for a party.

I’m going to try making it again with coconut flour for sure.

Ingredients: For the crust: 3 cups coconut flour (or almond flour)
